Cherry Loaf...and Pyrex

My fiance is in love with the cherry bread at Bob Evans...he literally says "mmm" during every bite.

So I found a copy recipe and decided to give it a try!

Maraschino cherries

All done!

It turned out great! Got the boy's stamp of approval. :)

Of course, my favorite part of baking is cleaning my Pyrex!

    1. Whoops, I'm sorry! I'm terrible at remembering to post recipes! I tried this one:
      1 Cup Sugar
      1 Cup Milk
      4 tsp Baking Powder
      2 Eggs, beaten
      1 tsp salt
      2 cups + 1 cup all-purpose flour, sifted
      2 tbs butter, melted
      1 16-oz jar Maraschino cherries, drained and chopped

      Directions
      In a mixing bowl: Add the sugar to the eggs and beat well. Alternating, mix in the 2 cups of sifted flour and milk.

      In small bowl: Combine the 1 cup sifted flour, baking powder, and salt; Stir into batter.

      Add cherries and melted butter. Mix well. Pour into 2 greased and floured loaf pans. Bake in a 350 oven for approx. 1 hour or when tops are golden and firm.

      The original recipe used one loaf pan but the bread "overflows" pan while baking. Recipe was calculated for 24 servings (12 servings per loaf).

      Delete
